INGREDIENTS: - Flour (500 g)-Water (450 g) -Olive oil (30 g) -Salt (25 g)

1) In a bowl mix the flour with yeast, salt and water. Once done, cover the dough with a plastic wrap and put it in the refrigerator. Let the dough mature for at least 24 hours.

2) Prepare the sauce: pour the peeled tomatoes in a bowl and mash them with your hands, then season with salt, oil and basil. After that cut the mozzarella cheese.

3) After the leavening time, roll out the dough. When you have obtained a circle of about 28 cm in diameter sprinkle the tomato evenly and distribute the mozzarella, then season with a little oil.

4) Transfer the pizza to the oven and cook it at 250° for 7 minutes. Once cooked, remove it from the oven and slide the pizza onto a plate. Garnish it with a couple of basil leaves and serve your margherita pizza immediately!
