Where I grew up !!

The Canton Region

In America as in Britain, almost all the early Chinese cooks came from a single region: the Cantonese South. Majority of Chinese cooks in Britain were farmers with little training in the culinary arts, and many foot soldiers in America immigrated from a few rural counties who had been driven into exile by the pressures of overpopulation and poverty. In both countries, the new Chinese cuisine developed mostly as a tool for economic survival.

Mixed Beef Tripe

Eating all parts of the beef - intestines, stomach, lungs, spleen, liver, in a hearty stew with immaculate flavour. Usually eaten with daikon.

Fish balls

Chewy fish paste shaped into a ball and coated in a thick curry sauce + drizzled with chilli oil.

Fried pork intestine

Usually topped with sweet chilli sauce and mustard, has a pungent smell but it's so crispy and the texture is amazing

A brief history of Banchan

- result of Buddhist influence - fermenting was the traditionally preferred method of preserving food as oil was short in supply, unlike the Chinese who usually preferred pickling and frying - the prominence of fermented and preserved foods is due to the need to apply a preservation method that could survive the harsh winters and summers filled with extreme temperatures.

There aren't that many side dishes like banchan, but we have a lot of stored ingredients that are staples within a Chinese household. This can include: - edible tree fungus (this is the only translation I can find) - fermented bean curd (at this point I'm realizing nothing is going to sound appetizing) - pickled mustard greens (the GOAT of preserved veg) - dried sausages and shrimps - goji berries - seeds

Mooncakes

Mooncakes are traditionally eaten during the Mid-Autmn Festival, and traditionally has a whole salted egg yolk in the middle to represent the whole moon. The Festival is usually celebrated through moon watching and reuniting with family.

Sweet red bean paste is also a common option

Rice Dumplings (粽子)

Traditionally eaten during the dragon boat festival. The glutinous rice is usually soaked and marinated beforehand, and then steamed/ boiled for an hour before consumption. Different regions have different fillings.

8 treasure soup

Traditionally eaten during winter solstice - a very very important meal. It's called 8 treasure as it contains a few of the most important and fundamental ingredients in Chinese medicine that is known to be good for your body.

As you can tell, lotus is a very important component of Chinese dining

The International Health Exhibition 1884

This was the first incidence of Chinese food that attracted the attention of the British Public. It was a gracefully decorated pop-up with a menu of 30 dishes, created by a team under the direction of an accomplished Hong Kong chef. The food was considered "fashionable and trendy" for the upper class, and led to the guest chefs cooking for Queen Victoria.Reflection points: I find it very interesting how it is only when something is considered "trendy" by Westerners that people actually consider Chinese food as something more than just bats and dogs.
