How to do Gattafin?

1. First of all we have to prepare the mad dough : put the oil and the water into a bowl with the flour
2. When the dough is elastic and homogeneous, it's ready. Put it in the fridge
3. Wash and cut the onion and the leek, then put them in a pan with some oil
4. Wash the chard and the prebbugiun and chop them, after that add them to the fry onions and leeks

1. Put all the ingredients in a bowl (parmesan cheese, pecorino cheese, vegetables, salt) with the eggs. Mix them until dry.
2. Roll out the mad dough and cut it into strips.
3. Place one little piece of filling on the dough, then fold itself/close them and fry them.
