Pollo Chuco

ingredients

  • 2 pounds of chicken
  • Chicken soup
  • Wheat flour
  • green banana
  • cumin spices
  • Cabbage
  • 2 tomatoes
  • 1 onion
  • 1 pepper
  • Coriander
  • 3 cups of oil for frying
  • Vinegar
  • Salt
  • Wash the chicken, cut it into medium portions.
  • In a medium container, put the chicken pieces and add the chicken broth, cumin, a teaspoon of vinegar and let it rest for 10 minutes.
  • Heat the pan while you add the flour to a plate, coat the chicken and fry until golden. Then remove the chicken and place it on a plate with absorbent paper to remove excess fat.
  • For the slices, cut the green banana into thin slices and fry in the same pan as the chicken for more flavor. Also absorb excess oil in a paper-lined container.
  • To prepare the chismol, chop the tomatoes, onions and peppers and put them in a container.
  • Season with lemon, spices, chopped cilantro and salt, then chop the cabbage and place in a separate bowl. You can add whatever seasoning you want to the chismol.
  • For the dressing, in a small bowl combine the mayonnaise, sweet ketchup and mustard and mix well. You can also add a little whole milk, a little cooking margarine, and your favorite seasonings.
  • Serve the chicken with small slices of green banana, chismol and cabbage. Then adjust the dressing, cheese or chimichurri if you wish.
