- Maitriser le macaronnage (10')
- Dresser des coques régulières (20')
- Réaliser une ganache ou une crème (30')
- Assembler les macarons (20')

- Macaronner
- Coucher des sphères régulières en quinconce
- Laisser croûter 20 à 30 mn
- Enfourner à 150° 13 mn environ
