Named after Santa Fe, New Mexico, the Santa Fe Salad draws inspiration from the bold Southwestern flavors that define the region near Route 66. With fresh ingredients and a touch of spice, it reflects the vibrant culinary influences travelers would experience while journeying through New Mexico along the Mother Road.
The Cobb salad was created in the 1930s at the Brown Derby in Los Angeles by Robert H. Cobb. And Los Angeles is the western terminus of Route 66—the place where road-trippers famously ended their cross-country journey.
COBB SALAD
Baja fish tacos trace their roots to the coastal communities of Baja California, Mexico, before becoming a staple of Southern California’s surf and beach culture. Since Route 66 ends in Los Angeles and Santa Monica, the tacos naturally connect to the flavors travelers would discover at the end of the Mother Road. They represent the laid-back West Coast spirit and cross-cultural influences that define California dining.

Ismail I Muhammad ("Chef Mo") is a Chicago firefighter whose life has been built on service, discipline, and authenticity. Raised in the heart of Chicago and forged through decades of public safety work, he carries the same commitment from the firehouse to the kitchen. MO’s Firehouse Chilli was born from that tradition — a recipe inspired by firehouse camaraderie, long shifts, and the bold flavors that bring firefighters together after the alarm quiets.
