Using a 10cm square cutter, cut out as many squares as you can. (If I were you, I wouldn’t re-roll your – the more they’re the less of a snap they’ll have. And you need that cheeky snap! So just put your scraps on an extra baking tray and those can be your , cool, trendy crackers.)

I’m a massive fan of ice cream. On top of puddings, tarts, pies – I mean, some people have it with custard as well! Crazy, right? This ice cream recipe pretty much plays the same role as vanilla – it’s a crowd pleaser. But with its different combination of sugars, it gives the frozen treat a deeper flavour. Ooo, get you, Liam, getting all cheffy.

Churn in an ice cream maker and put in the freezer.
Sieve the custard, cover and chill overnight.
