Irish Soda Bread

• 1 and 3/4 cups buttermilk • 1 large egg (optional) • 4 and 1/4 cups all-purpose flour, plus more for your hands and counter • 3 Tablespoons granulated sugar • 1 teaspoon baking soda • 1 teaspoon salt • 5 Tablespoons unsalted butter, cold and cubed • optional: 1 cup raisins

1. Preheat oven: Preheat oven to 400°F (204°C). There are options for the baking pan. Grease a 9-10-inch cake pan or pie dish. You can also use a 5-quart (or higher) Dutch oven. Grease or line with parchment paper. If using a Dutch oven, bake the bread with the lid off. 2. Whisk the buttermilk and egg together. Set aside. Whisk the flour, granulated sugar, baking soda, and salt together in a large bowl. Cut in the butter using a fork, or your fingers. Mixture is very heavy on the flour, but do your best to cut in the butter until the butter is pea-sized crumbs. Stir in the raisins. Pour in the buttermilk/egg mixture. Gently fold the dough together until dough it is too stiff to stir. Pour crumbly dough onto a lightly floured work surface. With floured hands, work the dough into a ball as best you can, then knead for about 30 seconds or until all the flour is moistened. If the dough is too sticky, add a little more flour. 3. Transfer the dough to the prepared skillet/pan. Using a very sharp knife, score the dough with a slash or X about 1/2 inch deep. 4. Bake until the bread is golden brown and the center appears cooked through, about 45-55 minutes.

Boiled Dinner

Ingredients All vegetables are optional. Use what you love and skip what you don’t. • 1 corned beef brisket (with seasoning packet) • Onions (with outer layer off, I throw them in whole) •Potatoes, scrubbed (whole or halved if large) • Carrots, peeled • 1 head of cabbage, cut into quarters • Water (enough to cover) • Optional: 1 bottle of beer and or beef broth

Corned beef is a cured, brined brisket. It has a reddish color inside because of the curing process, but don’t worry, it’s fully cooked and perfectly safe to eat. Ingredients

Instructions 1. Start the Corned Beef In the morning, place the corned beef in a large pot. Sprinkle the seasoning packet over the meat. Add enough water to fully cover the brisket. If using beer or beef broth, substitute part of the water with it for extra flavor. Do not overfill the pot; you will be adding vegetables later. Bring to a boil, then reduce the heat to a gentle simmer. Cover with a lid and let cook for about 3 to 4 hours. Check occasionally and add more water if the level gets too low. 2. Add the Vegetables (in stages) After the meat has simmered for 3 to 4 hours, begin adding the vegetables based on how long they take to cook: • Add potatoes and onions first. • About 1 hour later, add the carrots. • About 30 minutes before serving, add the cabbage. It can sit on top of the other vegetables and steam until tender. If your pot is too full: Cook the corned beef until it is fork-tender and falling apart. Remove it from the pot and set aside, loosely covered. Then cook the vegetables in the flavorful broth you created. 3. Check for Doneness The corned beef is ready when it is fork-tender and easily pulls apart.
