Ingredients: 2 servings • 1/2 cauliflower • 1/4 pomegranate • 180 g plain yogurt • extra virgin olive oil • 1.5 tbsp kebab/gyros seasoning or garam masala*, a pinch of hot paprika, salt and pepper • coriander or parsley
Instructions: • Bring a large pot of water to a boil and salt it. Divide the cauliflower into medium-sized florets, add to the boiling water, and cook al dente for about 6–7 minutes. Drain well. • Meanwhile, remove the pomegranate seeds: first cut off the top and bottom, then score the peel vertically, break the fruit into sections, and release the seeds. • Spread the spices on a plate and coat the cooked cauliflower with them. Drizzle with 1 tablespoon of extra virgin olive oil and mix well. Season with freshly ground pepper and salt. • Heat a frying pan, add a little olive oil, and briefly fry the cauliflower on all sides. Alternatively, use a grill pan, an air fryer, or the oven grill. • Spoon the yogurt onto plates (about 3 tablespoons per plate) and spread it out. Top with the cauliflower, then sprinkle with pomegranate seeds and coriander or parsley.
