Mole (pronounced "moh-lay") is a special, super-tasty Mexican sauce that's a big deal in Mexico! It's not just one sauce; it's a family of rich, complex sauces that can be sweet, smoky, or spicy. What is Mole?
It's a "Mix": The word "mole" comes from the Aztec word mōlli, which just means "sauce". It's made by mixing lots of different ingredients together. Lots of Ingredients: An authentic mole recipe can have over 20 or 30 ingredients, including dried chili peppers, nuts, seeds, fruits, and spices like cinnamon and cumin. Not Always Spicy: Even though chilis are a key ingredient, the sauce isn't usually super-hot. The chilis are often toasted and soaked to bring out flavor, not just heat, and other ingredients balance the spice. More than Chocolate: The most famous type has a little bit of chocolate in it, which makes it rich and dark, not sweet like a dessert sauce. But many other moles don't use chocolate at all! They can be green, yellow, or red, depending on what's in them.
