GrinnEd: Sustainability Experiences in Europe

Welcome to the official collection of activities from the Erasmus+ GrinnEd project. This eBook was born from the desire to document and share the results of two years of intense work, involving the active collaboration of schools from six European countries. The common thread of our six international meetings was environmental sustainability, explored through the eyes and hands of students and teachers.

6 European Countries 6 Partner Schools 12 International Meetings + 40 Teachers

Within these pages, you will not find just theory, but practice. We have collected the most significant teaching units and "Best Practices" tested in the field. These are real activities—experienced firsthand—demonstrating how international cooperation can generate innovative solutions for the environment. This resource is primarily dedicated to you, the students. We want to offer you a concrete source of inspiration: a showcase of replicable projects that you can propose, adapt, and implement in your own countries. We invite you to read through these experiences not as a finish line, but as a starting point for your commitment toward a more sustainable future.

Scherpenheuvel

This school year we decided to walk together with the entire group (650 students) along a marked route through nature. In this way, the school opts for a sustainable way of moving and wants to show that there is beautiful nature near Diest, including the Demer,… A bus was provided for students and colleagues who had mobility problems or who were injured, so that different cars did not have to drive back and forth. For the return journey, the students could indicate in advance whether they wanted to travel back to Diest by bus or on foot.

At the end of each school year, our school organizes a farewell celebration with a look back on the previous school year for the students of the 5th, 6th and 7th year. Traditionally, this celebration takes place in Scherpenheuvel-Zichem. That is a small town about 6 kilometers from Diest. In recent years, students were free to come to Scherpenheuvel themselves. Most students were brought to the celebration by their parents.

The river

A walk then takes you to the Ambleve. The Ambleve is a river that turns into the Maas. The Meuse is the stream that was partly responsible for the massive flooding in the summer of 2021, which was the first major weather disaster in Belgium that is almost entirely attributed to global warming. In this way, the aim is to introduce students in practice to the problems that rivers can cause due to global warming. Afterwards, the lessons discuss possible solutions.

In recent years there has been a lot of commotion in Belgium about rivers and water levels. Due to global warming, we in Belgium have often had problems with drought in recent years or, like this year, with floods. As part of the Geography course, colleagues organized a trip to the origins of the Ninglinspo. A walk then takes you to the Ambleve. The Ambleve is a river that turns into the Maas.

Urban Run

On Friday, May 24, KSD invites you to the third edition of the KSD Urban Run! This event offers a unique opportunity to explore the city of Diest in a special way. During this experience tour you will not only explore the buildings of KSD but also other historical and public locations in Diest. Walk the halls of the Citadel and discover hidden places in the city during this unforgettable experience. The Urban Run has distances of 3.5, 6.5 and 10 km, so there is something for everyone.

Important to know: the Urban Run is not a competition and no time registration is kept. It's purely about the experience and enjoying the unique atmosphere of Diest. You have the choice to walk and/or run during the Urban Run.With this initiative we want to put the city of Diest in the picture in a sporty way. In this way, students from our school get to know the city of Diest in a different way while walking or walking (sustainable journeys).

Understanding our Impact: We visited the Blegny mine to study the transition to sustainable energy

There was a large mining industry in Belgium. The last mines closed in the early 1990s. The coal industry was a very important industry in Belgium for many years. In the context of the transition to sustainable energy, our school decided to take a trip to the Blegny mine. That is the only mine in Belgium where you can still descend and see what it was like then. In addition to working and living conditions, the impact of mining on the environment is also explained.

From Classroom to Climate Action: Your Blueprint for a Greener Future

Introduction: More Than Just a School Project This isn't just a report about school activities; it's the story of how one school community turned ideas into action. It chronicles a journey from discussing sustainability in the classroom to cooking the food of the future and visiting the farms where it grows. It proves that tackling big topics like climate change and food systems doesn't have to be overwhelming. The purpose of this document is to share that journey and provide a practical, inspiring blueprint for students anywhere to launch similar, high-impact initiatives.

"It proves a simple but powerful point: small, organized steps can make a huge difference. Real change starts right here in our school."

Building the Foundation: The Power of a Student-Led Teama Greener Future

ITo ensure projects have momentum and continuity, you must build an organized group. In our case, the "AG Nachhaltigkeit" (Sustainability Working Group) became the central hub for planning and execution. The Structure: The group met 2–3 times per semester to coordinate efforts. Crucially, it included representatives from every single class. The Benefit: This structure ensured information flowed seamlessly throughout the school, fostering shared ownership and preventing sustainability from being a niche topic for a small committee.

"To create lasting change, you need more than just a single good idea; you need an engine to drive it forward."

Sparking Change: Using Media and Events

Educational events are the spark that ignites curiosity. We used two distinct formats to transform abstract concepts into compelling stories. Film Screening: We screened "Generation Change - Wer rettet die Welt" at a local cinema. Movies are a low-effort, high-impact way to convey emotional and factual information to a wide audience. Interactive Lecture: We hosted the "Klimashow young," an interactive event exploring climate science and solutions. Unlike passive lectures, this format encouraged questions and critical thinking, making the science accessible and empowering.

"Before you can ask people to change their habits, you must first capture their attention and give them a reason to care."

Hands-On Action: Exploring the Future of Food Greener Future

IWe moved from theory to practice by focusing on the most impactful area of sustainability: nutrition. The "Savoy Konzept": We offered a recurring, multi-session course titled "What will we eat in the future?" Students learned to cook vegan dishes directly with a nutrition teacher. Student-Led Curriculum: We integrated sustainable cooking into regular classes, where students researched and selected their own vegan recipes to prepare. This fostered genuine curiosity and normalized plant-based eating for everyone, not just volunteers.

"Real change happens when knowledge is put into practice. Hands-on experience makes learning stick."

From Kitchen to Farm: Connecting with Sustainable Agriculture

To connect students with the source of their food, we organized field trips to pioneer farms practicing Solidarity Agriculture (Community Supported Agriculture). Deepening the Experience. Highly engaged students from the extra-curricular course visited the DA Genussgarten. This served as a reward for dedication and offered a deep dive into bio-certified farming. https://www.farmtotable.bz.it/ A Farm Visit. Regular classes visited the Bachguterhof. By embedding this into the core curriculum, we ensured that a foundational understanding of sustainable farming reached the broader student body, not just the "eco-club." https://www.bachguterhof.com/

"True understanding of our food system cannot be found solely in a classroom; it must be grounded in the soil itself."

Experiences in Senigallia

Every day, more than 80% of the students gather before entering the Panzini Gastronomy and Tourism School in Senigallia They light up a cigarette and throw it on the ground. Young people don’t think about the consequences that can lead to big problems for the environment. To completely dispose of cigarette butts it takes about 15 years which is three times our school career. Every year 4.5 trillion cigarette butts are released into the environment. Fish, birds and marine animals can eat the cigarette butts exchanging them for food and this can damage their organs. To prevent this type of pollution it would be necessary throw them into suitable containers. Ah, if only there would be more containers!

Cigarette Butts Pollution

During our rubbish collection on the beach we found many cigarette butts thrown on the sand that makes the collection difficult. The solution for this type of problem will surely be: - Making kids be aware of the risks that smoking can be harmful for our health and the environment. - Putting more containers in front of schools for the butts collection. - Producing biodegradable cigarettes Our thoughts are the young people don’t thing about how serious this problem is. The future is in our hands but we still don’t think about it. The planet needs our help in small and big ways and we are the starting point for a new beginning and a new planet.

"Don't wait 15 years: Use the bin and stop the 4.5 trillion butts that poison our planet."

Building Real Eco-Action, Responsibility, and Knowledge in Latvia

The best practices Riga State Technical School, Latvia

Eco Council is student’s organization at Riga State Technical School. Their activities and green management at school is inspired by researcher Ewa Duda, 2022 “Building the Learning Environment for Sustainable Development: a Co‑creation approach” who focused on education for sustainable development - shaping pro-environmental attitudes and behaviours relies upon five key dimensions: responsibility, sense of empowerment, local leadership, “real” eco-approach and eco-knowledge. Eco Council with school management support have promoted education for sustainable development approach implementing the following activities:

On Warm Sweater Day

"Don't wait 15 years: Use the bin and stop the 4.5 trillion butts that poison our planet."

The heating temperature was slightly lowered in the classrooms, and for this reason, everyone is encouraged to wear a warmer sweater as a symbolic gesture of support for the initiative. more on:

Organization of Eco Council Challenge Week.

The aim of Challenge Week was to raise awareness of the Eco Council and promote eco-friendly thinking. Throughout the week, students engaged in daily activities shared on the Eco Council's Instagram. • Monday: Students brought their own water bottles. • Tuesday: In collaboration with the Charity Club, treats and food were collected for animals. • Wednesday: An Eco-themed quiz took place at the school’s campus. • Thursday: Participants dressed like elements of nature and took photos at a themed photo corner. • Friday: A photo summary of the week was posted, and a "people’s choice" vote highlighted the most inspiring moments.

competition and environmental awareness among students. The school plans to make this participation a systematic and ongoing activity in the next planning period. In addition to collecting waste, RSTS students also take part in environmental clean-up events and organize public awareness activities to promote eco-friendly behavior and pollution reduction. Information about these initiatives is shared through social media, the RSTS website, posters, and classroom discussions, where teachers emphasize that collecting and sorting waste paper helps conserve natural resources. These efforts aim to raise students’ awareness of the importance of waste sorting and recycling in daily life and to develop an understanding that properly sorted and recycled waste can become valuable raw material for the production of new products.

Every year, the Latvian organization “Zaļā josta” invites pre-school, primary, secondary, and vocational education institutions across Latvia to take part in the waste paper and battery collection competition “Clean Latvia!”. Riga State Technical School (RSTS) has established a regular waste collection and delivery system and created a dedicated working group consisting of teachers and students to participate in the competition. Throughout the academic year, educational institutions collect waste paper and engage in various environmental and community involvement activities as part of this initiative. RSTS actively participates both in the national competition and in an internal inter-group contest, encouraging friendly

Cutting Down Plastic Bottle Waste.

Cutting Down Plastic Bottle Waste. To reduce the waste generated by plastic water bottles, a drinking water station has been installed in the school corridors on practical training center and main building. It also improves students’ access to clean drinking water.

Promotion of sustainable development during different events.

Eco Council promotes sustainable development through different activities and promotional materials in “Latvia skills”, “Open door” days at VET school, Forest Days event "Latvijas meža dienas". Through creative and community-based activities, RSTS involves students, parents, teachers, and the wider public in learning about green knowledge and sustainable lifestyles, encouraging environmentally friendly habits and supporting long-term sustainable development.

"The work is not finished; it is just beginning. Go forth and plant the seeds of a greener future."

On May 28, 2025, a different group of 18 students from the regular classes (2. Hofa B and C) visited the Bachguterhof. This bio-certified farm is a true pioneer, recognized as the very first in South Tyrol to operate on the solidarity agriculture model. This visit wasn't an extra-curricular reward; it was an integrated part of the core curriculum. The power of this strategy lies in its reach. By embedding a farm visit directly into the standard nutrition class, the program ensures that a foundational, real-world understanding of sustainable agriculture reaches a broader group of students. It normalizes the connection between the classroom and the farm, making it a core part of their education, not just a niche interest. These direct encounters with local pioneers provided the final, crucial piece of the puzzle, proving that a better food future is possible and inspiring everyone to consider their own role in building it.
