Winter Cracker Candy

Winter Cracker Candy

Saltine crackers coated with caramel and chocolate make a salty, crunchy and very classic winter treat.

Ingredients/items needed to make Winter Cracker Candy during our meeting

  • 28-35 saltine crackers (about one sleeve)
  • 1 cups firmly packed dark brown sugar
  • 2 sticks butter
  • 1/4 tsp kosher salt
  • 1 tsp vanilla extract
  • foil lined 10x15 jelly roll pan
  • 2 cups (10 to 12oz) chopped semi-sweet chocolate***

***If you use chocolate chips they may NOT spread as easily and might have trouble sticking to the layers. Try Bakers chocolate bars, found in the baking aisle.

1. Preheat oven to 400 degrees. 2. Line a 10x15-inch jelly roll pan with aluminum foil and lightly spray with nonstick baking spray. 3. Place the saltine crackers in a single layer on the bottom. 4. Place the brown sugar, butter, and salt in a medium-sized saucepan. Cook on medium heat, stirring frequently, until the butter melts. Continue to cook, stirring often, for another 3 to 5 minutes, until the mixture comes to a boil and the brown sugar melts into a smooth sauce. Do not allow the mixture to boil longer than 30 seconds. 5. Remove from heat and stir in the vanilla extract. 5. Pour the hot brown sugar/butter mixture over the saltine crackers. 6. Place the cracker/brown sugar pan into the oven and bake for 5 minutes. 7. Place the chopped chocolate in a microwave-safew bowl. Cook it in the microwave in 30-second intervals at full power stirring each time until teh choclate has fully melted. 8. Once the crackers are done baking, remove from the oven and allow to cool for 1 minute exactly, until the caramel is no longer bubbling and the crackers settle back into place. Then pour the melted chocolate over the crackers. Use a spatula to spread the chocolate evenly over the top. 9. Let the pan cool to room temperature and then put it in the refrigerator to chill over night. 10. The next day pull the pan out of the fridge and carefully peel the foil. Cut the candy into snack sized pieces using a chef's knife, or use your hands. 11. Store in an airtight container in the refrigerator

Holiday Cracker Candy

Ingredients

  • 28-35 saltine crackers (about one sleeve)

  • 1/4 tsp kosher salt
  • 1 tsp vanilla extract
  • 2 cups (10 to 12oz) chopped semi-sweet chocolate

Line a 10x15 jelly roll pan with foil (lightly spray w/ baking spray) and place saltine crackers in a single layer.

Make the carmel sauce. Place brown sugar, butter, and salt in saucepan. Cook on medium heat, stirring frequently. Once butter melts, continue to cook for 3-5 minutes

Take off heat and stir in vanilla extract.

Pour the hot brown sugar mixture over the saltine crackers.

Put in the oven and bake for 5 minutes.

Melt the Chocolate in 30 second intervals in a microwave-safe bowl until completely melted. Be sure to stir after each 30 seconds in the microwave.

After you remove the crackers from the oven, let it sit for exactly one minute then pour the chocolate over the baked crackers.

Let the crackers cool to room temperature then move to the refrigerator and chill over night.

Peel foil from crackers.

Crack into bite sized pieces.
