- La kératine est une chaîne de 18 acides aminés. Le plus important est la Cystine.
- La Cystine : Elle contient des atomes de soufre. C'est elle qui permet de créer des ponts entre les chaînes de protéines.
- La structure : Elle s'organise en "hélice alpha" (comme un ressort). Plusieurs hélices s'enroulent pour former des microfibrilles, puis des macrofibrilles.
