sAFE FOOD HANDLING
- Wash your hands with soap and warm water for at least 20 seconds before, during, and after preparing food.
- Rinse all vegetables under cool tap water. Do not use soap or detergents to wash produce.
- Wash cutting boards, dishes, utensils, and countertops with soap and hot water or a diluted bleach solution.
- Refrigerate perishable foods promptly, within two hours.
- Maintain fridge temperature at 40 degrees or below.
- Thaw raw salmon in the refrigerator overnight, in cold water (sealed in a plastic bag), or in the microwave on the "defrost" setting.
- Never thaw foods at room temperature.
- Use separate cutting boards for fresh produce and raw meat, poultry, or seafood.
- Never place cooked food on the same plate that held raw salmon unless it has been thoroughly washed.
- Store raw salmon in a sealed container or plastic bag on the bottom shelf of the refrigerator.
- Cook salmon to an internal temperature of 130 to 145 degrees F for medium to well done. Use a food thermometer to check the thickest part of the fillet.
- Properly cooked salmon will be opaque and flake easily with a fork.
