Pozole Blanco is a traditional Mexican soup made from hominy and meat, typically pork or chicken, simmered in a clear, un-chiled broth. Unlike its red (\(rojo\)) and green (\(verde\)) counterparts, the "blanco" (white) version omits the use of chile peppers in the broth, resulting in a milder, savory flavor profile that showcases the quality of its core ingredients. Pozole blanco was a stew that was popular with the Aztecs of Mexico. The Aztecs’ primary source of food was corn, and they considered it a sacred plant.

Creole Seafood Gumbo: One of the most comforting dishes that warm my insides during the cold months is Gumbo. Gumbo which stems from the west African word Okra is a marriage of meats, spices, and flavors that would awake anybody's senses. It’s a labor of love meal that takes about 45 minutes of constant stirring to create the rich dark brown roux (flour and oil) that sets the stage for the Holy Trinity (a mix of finely chopped celery, onion, and bell peppers). Then you add tomatoes, Creole spices and herbs such as thyme, bay leaves, smoked paprika, Cayenne Pepper, Seasonings, cover with a fragrant chicken stock, add your chicken thighs, andouille sausage, shrimp, crab, followed up with okra, and file powder. Served over long grain white rice, with a homemade buttermilk biscuit.
