Perennial Grows new plant from crown every year. Start by planting bare root crown in spring. Harvest young stalks in early spring. After spring harvest, let plant grow. Will grow into large fringy plant - up to 6’ tall. Allowing plant to grow fully after spring harvest helps crown and roots regenerate.

Hardy, long-lived perennial. Most plants produce for 10-15 years or more. We harvest the leaf petioles. Large leaf blades are poisonous and should not be eaten. Usually started by planting a dormant crown. Do not harvest in the first year. This gives plant time to develop root system. Harvest lightly in second year. After that, harvest stalks when about 1” in diameter, for 6-8 weeks. After harvest, let plant grow. Remove flower stalks. Divide crown every 3-5 years to keep it productive. Often classified as a "fruit" in plant catalogs because it is often sweetened and cooked with fruits.
