Wine

Early in the morning, the harvest begins. Afterwards, the grapes are brought to the "palmento" for crushing. The next day, the grape harvest continues, and the grapes are first crushed using a mechanical crusher, then stomped with boots. After that, the wine is left to rest, and the must is transferred to the cellar for aging.

Places

Built in 1816 in the heart of the historic center, the Fontana Vecchia served over time as a public fountain and washouse. Originally, it featured five marble mascaron as water spouts (only one remains today), iron supports for lanterns, and niches in the wall for soap. The walls were once decorated with frescoes, later covered with plaster.

WINE:CULTIVATION

The grapes of Verbicaro, grown on the hills of the Pollino mountains, come from native varieties like Gaglioppo and Greco Nero, in an environment ideal for viticulture. The harvest, done by hand between September and October, is a tradition that combines quality and rural culture. From these grapes comes Verbicaro DOC, an authentic wine deeply connected to its territory.

Typical food from Verbicaro

The gastronomy of Verbicaro offers a rich variety of traditional dishes, the result of a long history and artisanal techniques preserved over time. Among the first courses, the "fusiddi" seasoned with goat meat sauce and the "lagani e fasuoli", or homemade tagliolini with beans, stand out. Among the second courses there are "vrasciole", pork rolls, "baccalà e pipi saccati" (cod with dried peppers), "pipi mpajanate" (dried peppers mixed with a batter of flour, water and yeast), and "mijini", a bread with corn flour. The area also produces fine cheeses and cured meats, such as sheep's milk ricotta in "custigni" (hand-woven rush containers), "ricottale" (salted and smoked ricotta), capicollo, sausages, ham and "vrina" (bacon). Among the preserved products are courgettes, aubergines and tomatoes in oil, "cosi siccati" (spiral-cut and sun-dried courgettes)
