What is “specialty coffee”?

  • SPECIALTY COFFEE IS UNIQUE:
    • Always coffee arabica
    • Grown at the perfect altitude
    • Grown at the correct time of year
    • Grown in the best soil
    • Picked at just the right time
  • refers to coffee graded 80 points or above on a 100-point scale
  • Graded by a certified coffee taster or a licensed q grader

Coffee beans aren’t beans, they’re seeds!What we call coffee "beans" are actually the seeds of the coffee cherry. If unroasted and planted, they could grow into a coffee tree.

  • Every time you clock in and out for a shift or meal break you “attest” to your time punches
  • Leave a comment for your manager to refer to when they approve your time
  • You must claim any cash tips when you clock out

ADJUSTMENTS NEED TO BE MADE?

MEAL BREAKS:

  • All team members must take a 30-minute meal break. In California you must clock out before the start of their 5th hour of work
    • This is a required and uninterrupted meal break
  • You will “clock Out” and “clock In” from all 30 min breaks
  • You may WAIVE YOUR MEAL BREAK; however, your shift may not be longer than 6 hours.

MEAL BREAKS VS. REST BREAKS

REST BREAKS:

  • Team members may take one uninterrupted, 10-minute paid rest break for every 4 hours
  • You do not clock out for a rest break as these are paid breaks
  • Button down shirts: long or short sleeves, must be solid black or grey
  • T-shirts: long or short sleeves, any better buzz branded shirt!
  • Any other t-shirts must be solid black or grey.
  • A Better Buzz issued apron must always be worn while on shift

  • Full-length pants, capris, and shorts are allowed

  • Shorts must be no shorter than 4.5 inches above the knee

  • Must be “wipeable” (Made of material like PU or Leather)

What Is the SCA Coffee Taster's Flavor Wheel?

Originally published in 1995 by the Specialty Coffee Association of America (SCAA)—now simply SCA—it quickly became a foundational tool for the specialty coffee world. In 2016, the wheel received a major update in collaboration with World Coffee Research (WCR) and sensory scientists—including the Sensory Analysis Center at Kansas State University. This effort produced the World Coffee Research Sensory Lexicon, the most comprehensive work on coffee flavor to date.

  • The revamped wheel boasts a clearer, more intuitive design with meticulously chosen colors—pink for “sweet,” pastels for “medicinal”—that visually connect to the actual flavors they represent.
  • It reflects 99 carefully selected descriptors, organized into nine broad categories like sweet, floral, fruity, etc. This structure helps users refine from general categories to precise flavor notes.

The coffee belt refers to the band of tropical regions between the Tropic of Cancer and the Tropic of Capricorn where coffee is grown. This zone stretches across Central and South America, Africa, the Middle East, and Asia, providing the warm temperatures, rich soils, and consistent rainfall that coffee plants need to thrive. Within the coffee belt, different regions produce beans with distinct flavor profiles — for example, Latin America is known for bright and balanced coffees, Africa for fruity and floral notes, and Asia for earthy, full-bodied flavors.
