A peaceful haven with views of the Turrialba volcano Located at an altitude of 1,500 meters, Guayabo Lodge welcomes travelers and curious visitors in a warm atmosphere that combines local architecture and modern comfort.
Here, you can breathe in nature to your heart's content, surrounded by flower gardens, tropical trees, and spectacular views.

3 Types of process
From september to february only ripe red berries are picked, and the harvest is fully manual !
Harvest
After planting, it takes two years for the plant to start producing significantly.
Growing the shrubs
Roast process made the coffee a good taste and reduce the cafeine wich is too higher without this.
Roasting
In the first step of drying coffee it need an additional heater for 8 hours. On the second step the coffee is dried naturally by sun for 8 days
Drying process
Coffee beans mature for a least 2 months. Then according to the size and the weight coffee beans are sorted
After drying
The Aquiares River is a protected area extending 50 meters on each sides, making is a perfect natural corridor for many animals to pass throught. From the lodge, you can visit this river to enjoy its paeceful tranquility.
Dairy
The Guayabo Lodge farm provides fresh produce that is used directly in our kitchen. Our cows are milked twice a day, providing milk that is essential for various dishes such as cheese, kefir, and ice cream.
In addition, we also have sheep that help maintain the outdoor common areas.
Vanilla is harvested by hand, pod by pod, at the precise moment of ripening. This careful process ensures the quality and aroma of the vanilla.

Vanilla must be pollinated by hand, as its flowers open for only one day and cannot be naturally fertilized. This step is essential to produce the pods.
Pollination
Vanilla plants are supported by stakes made from two-meter branches of a nitrogen-fixing tree.
Planting
The pods are stored for several months in boxes or cloth, allowing their full flavor and aroma to develop.
Curing
The pods are briefly dipped in hot water to stop maturation and trigger enzymatic reactions.
Scalding
They are then exposed to the sun and later dried in the shade to reduce moisture, concentrate aromas, and prevent mold.
Drying
Vanilla, which comes from a tropical orchid, is fascinating both for its origin and its complexity. It is mainly cultivated in hot, humid climates.
The role of the banana tree in coffee cultivation
The banana tree provides natural shade that protects coffee plants and creates a favorable microclimate for their growth. Its leaves and trunks, once they fall to the ground, decompose into a nutrient-rich fertilizer, improving soil quality and moisture. A true asset for healthier and more sustainable coffee production.
