Camille's Recipes

From the kitchen of Camille Alvarado
Korean Style Ground Beef (Or Turkey, etc)
Ingredients:
  • 16oz Ground Beef/Turkey/Other Ground Meat
  • ¼ Gochujang
  • 3 Tbsp Soy Sauce
  • ~1 Tbsp Sesame Oil
  • 2 Tsp Garlic
  • 2 Tsp Ginger
  • 2 Tbsp Honey
  • 4 Tbsp Green Onion, Sliced
  • Rice/Noodles
  • Juilenned Cucumber
  • Salad Mix
Instructions:
  1. In pan, cook ground meat.
  2. Once cooked, drain fat, if desired.
  3. Add ingredients 2 through 7 and mix well.
  4. Let simmer for ~5 minutes.
  5. Serve with rice/noodles, cucumber, and salad mix, and garnish with green onion.

Simple Bibim Guksu (Korean Spicy Cold Noodles)
Ingredients:
  • 4 servings Soba/Buckwheat Noodles
  • 4 Eggs
  • 4 Tbsp Gochujang
  • 4 Tbsp Rice Vinegar
  • ~2 Tbsp Honey
  • 2 Tbsp Soy Sauce or Coconut Aminos
  • ~1 Tbsp Sesame Oil
  • Juilenned Cucumber
  • Arugula
  • Sliced Cabbage
Instructions:
  1. Cook your noodles per package directions. Rinse under cold water.
  2. To cook eggs, boil in water for 6.5-7 minutes for a jammy center or 10 for hard boiled. Remove and place in an ice bath to stop cooking, then peel.
  3. In a bowl, combine gochujang, honey, rice vinegar, soy sauce/coconut aminos, and sesame oil. Mix until smooth.
  4. Add chilled noodles to the bowl and toss until coated evenly.
  5. Serve with julienned cucumber/arugula/cabbage, sesame seeds, and egg.

Quinoa Tabbouleh
Ingredients:
Instructions:
  1. Quinoa: Place quinoa in a saucepan and add in the water and salt. Give it a mix, put the lid on and bring it to a boil in medium high heat. Once it comes to a boil, turn down the heat to low and cook for 10-12 minutes or until water is fully absorbed. Take it off the heat and let it rest for 15 minutes. Fluff it with a fork and place it in a large salad bowl.
  2. Salad dressing: Meanwhile, prep the dressing by whisking all dressing ingredients in a small bowl. Set it aside.
  3. Assemble: Place all tabbouleh ingredients in the bowl with the cooked quinoa.
  4. Drizzle it with the dressing. Give it a toss.
  5. Taste for seasoning and serve!

Cinnamon Roll Date Cake
Ingredients:
Instructions:
  • Cake
  1. Preheat the oven to 350°F.
  2. To make cinnamon topping, combine ingredients in a small bowl and mix well.
  1. Add chopped dates to a small bowl with 1 cup boiling water for ten minutes. Transfer to blender or blend using an immersion blender until smooth
  2. Add date paste, eggs, maple syrup, olive oil and vanilla extract to a large bowl and whisk until thoroughly combined.
  3. Fold in flour, baking soda, baking powder, salt and cinnamon until batter is smooth and uniform.
  4. Transfer to a greased 9x9 baking dish then sprinkle the cinnamon mixture evenly over the top of the batter.
  5. Bake for 35-45 minutes until a toothpick stuck into the center of the cake comes out with just a few crumbs.
  6. To make glaze, combine ingredients in a small bowl and whisk well then drizzle generously over cake.
