1. Gather all cleaned parts to the ice cream machine. (Door, mixer blade, handle with attached metal plate, loose handle, small round glass plate, short metal spring, rubber seals (3), plastic bin cover & metal rod, bin plug, metal wand).
2. Add lubricant to rubber rings and metal joints of moving parts. (i.e. seals, door hinge, mixer blade)
3. Attach ring to mixer blade and attach the blade to the machine. It should “lock” in place.
4. Place the door on the machine and attach the rubber ring. Be sure that it is securely attached.
5. Close the ice cream machine door. Then lock it in place by turning the knob clockwise. It will sound when locked shut.
6. Add lubricant to the small black ring, attach it to the glass.
7. Next, below the bin, add the glass plate and handles.
8. Hold the glass on the machine and secure the spring in the middle of the glass with one hand while attaching the handle with the other.
9. Screw on the handle. Then, turn the handle counterclockwise to make sure that it opens and shuts the glass plate. This is how you will remove the ice cream from the machine when ready.
10. Add the plastic cover to the bin.
11. Add the metal rod to secure it to the machine door.
12. Machine Prep is now complete.

• Apply Lubricant
• Attach Blade & Door

• Assemble Spout
• Attach Bin Cover

Making Ice Cream

1. Preparing Ice Cream Mixture
2. Into the large stainless steel ice cream container, pour the ice cream “Pre Gel” base mix.
3. Prepare the fruit or flavor add ins for the specific ice cream. Add these to the mix.
4. Measure and add 7 cups of milk to the mixture.
5. Measure and add 4 cups of heavy cream to the mixture.
6. Add in any additional fruit or flavors to the mixture.
7. Use the hand mixer to blend the mixture to a smooth texture.
8. Complete.

• Add PreGel Base
• Add Fruit or Flavors
• Add Milk & Cream
• Blend

1. How to add ice cream mixture to the machine.
2. Lift plastic cover.
3. Now, slowly pour the ice cream mixture into the bin.
4. If necessary, unclog the opening as ice cream is funneled into the machine.
5. Add the small plug to the bin.
6. Turn on the machine by turning the knob to “Production.”
7. Set the machine timer for 15 minutes.
8. Complete.

• Slowly pour ice cream mixture into the machine.
• Turn on machine to "production."
• Set 15 mins on the timer.

Extracting Ice Cream

Making Ice Cream

1. Pouring & Freezing
2. Once the ice cream mixture is ready place a stainless steel ice cream container in front of the machine.
3. Lift the handle to pour the ice cream into the container.
4. Turn the knob on the ice cream machine to “Extraction.” The mixture will flow out of the machine.
5. Add marshmallow cream to the mixture and stir with spatula.
6. Turn off the machine.
7. Freeze the ice cream for 2 hours.
8. Complete.

Pouring & Freezing Once the ice cream mixture is ready place a stainless steel ice cream container in front of the machine. Lift the handle to pour the ice cream into the container. Turn the knob on the ice cream machine to “Extraction.” The mixture will flow out of the machine. Add marshmallow cream to the mixture and stir with spatula. Turn off the machine. Freeze the ice cream for 2 hours. Complete.

• Place the container under the spout.
• Lift handle.
• Change machine from production to extraction.

Cleaning the Machine

1. Add water to the machine to remove excess mixture.
2. Turn the knob to “Cleaning.”
3. Set the timer on the machine to clean for 5 minutes.
4. Repeat.
5. Remove parts and clean the machine.
6. Complete.

• Add Water
• Set to Cleaning
• Repeat 3x at 5 Minutes
