Making tortellini requires two days of work , as the meat filling must rest in the refrigerator for a whole night.

Add the Parmigiano Reggiano , egg and spices; the original recipe calls for nutmeg. Once you have the mixture , cover it with cling film and leave it to blend the flavors together .
The next day it's time to prepare the fresh pasta. On a wooden board , knead the flour and egg. until you form an elastic ball that you will leave to rest for half an hour.
In a pan with high edges, brown the pork loin in butter and rosemary, then mince it finely together with the Mortadella Bologna and the raw ham in a large bowl.

Place a teaspoon of filling in the center of each square, and prepare for the delicate step of closing the tortellino . Fold each square on itself along the diagonal to obtain the shape of a triangle, and then overlap the two corners at the base. Press hard with your finger at this point to seal the precious tortellino.
Using a rolling pin, roll out the dough until it reaches a thickness of 1 mm . Using a knife or pizza wheel, draw a grid on the dough, to divide it into squares with sides of about 3 cm.
The cooking time is very short, 4 minutes , or until the tortellini float to the surface of the water. Pair them with the sauce that most intrigues you
