When you have an open wound or boil appropriately band-aid the area/ glove your hand

NEVER sneeze or cough directly in front of customers or near the food. Always cover your mouth appropriately.

Lack of handwashing can leas to contamination of food and food surfaces with feces. Always maintain proper hand hygiene

Report symptoms of diarrhea, vomiting or jaundice to managers. If you are unfamiliar or need to reminded please refer to the Reporting Illness protocol in employee handbook.

Hands should always be washed in sinks designated for handwashing NEVER use the sinks designated for food prep/dishwashing/waste water.

Proper Hnadwashing

Guide to

1. Wet hands and arms using running water
2. Apply soap, build up a good lather.
3. Scrub hands and arm vigoursously for 10-15 sec. Clean the fingertips/undernails/between fingers
4. Rinse hands and arms under warm water thorougly.
5. Dry hand and arms using single use paper towel

Follow these steps. Should take at least 20 sec.

• Wash your hands when putting on gloves when starting a new task
• Select the correct glove size
• Hold gloves by the edge when putting them on
• Once on check for rips +tears
• Never wash and reuse gloves

• When they become dirty or torn
• Before beginning a new task
• After interruption (leaving the kitchen, taking a phone call)
• After handling raw meat, seafood, poultry, before handling ready to eat food.
• After 4 hours of continuous use

Pathogens found in the hair or skin can be easily pased on the food and equipment if the food handler does not follow the personal hygiene program.

Hand-Care Guidlines

• Fingernails should be kept short and clean.
• Food handlers can only use false fingernails when covered by single usegloves
• Nailpolish can only be worn with use of single use gloves

Infected wounds or boils

• Wounds or boils located on the hands, fingers, wrists, should be covered with a impermeable fingercoat/bandage. Then covered by a single use glove.
• A wound or boil on the arm must be covered with an impermeable cover
• Any other surface area of the body where a wound or boil is must be covered by a dry, durable, tight fitting bandage.
