Carbonara pasta
- 350 g pasta (spaghetti)
- 100 g parmesan cheese + extra for serving
- 200 g bacon pieces
- 1 egg + 2 yolks
- 2 crushed garlic
- salt and black pepper
- olive oil
Ingredients
- One pot;
- One frying pan;
- One spoon;
- One fork or a tong;
- One plate;
Utensils
- Beat the egg and yolks and season with a little freshly ground pepper. Add the Parmesan cheese, mix and set aside.
- Bring a pan of water and salt to the boil and cook the pasta until al dente according to the instructions on the package.
- Add a little olive oil to a wide frying pan and fry the bacon and crushed garlic over medium heat until golden, about 5 minutes. Remove the garlic from the pan.
- Drain the pasta (but reserve some of the cooking water) and add it to the pan with the bacon so that it absorbs the flavor and mixes well. Add a little of the cooking water, about 7 tablespoons and mix.
Preparation
5. Remove the pasta and bacon from the heat and quickly add the egg yolk and cheese mixture. Lift the dough with the help of a fork or tongs until it is completely covered with the mixture. Season with salt if desired.6. Serve immediately with a little more grated Parmesan cheese and black pepper.
