The history
The Slow Food movement was born in the 1980s in response to the growing prevalence of fast food and the globalization of the food industry. Its founder, Carlo Petrini, initiated the movement in Italy in 1986 with the aim of promoting a gastronomic culture that values quality, tradition, and sustainability. The first event that officially marked the birth of the movement was a protest against the opening of a McDonald's near the historic Piazza di Spagna in Rome. From that moment on, Slow Food has sought to enhance local products, culinary traditions, and sustainable agriculture, encouraging the consumption of food that is good, clean, and fair.
"Good, clean, and fair" is the founding principle of the Slow Food movement and represents three key values.Together, these three elements promote a holistic view of food that considers not only its flavor but also the environmental and social impacts of its production and distribution.

Slow Food Presidia are local projects created by the Slow Food movement to protect traditional and sustainable food practices. These initiatives focus on preserving rare and endangered food products, agricultural methods, and culinary traditions that are at risk of disappearing. The Presidia help support small-scale farmers, artisans, and producers who engage in sustainable and environmentally friendly practices.
