Define TCS Foods- These foods are known as time/temperature control for safety (TCS) foods because they require certain time and temperature controls to prevent unsafe bacteria growth.

What temperature should hot food be held, and what temperature should cold foods be held? Hot foods must stay hot above 140°F, and cold foods must stay cold below 40°F.

Define Temperature danger zone.- The danger zone is the temperature range in which food-borne bacteria can grow. 40 °F-140 °F

Foods that fall TCS danger zone

  • 4 groups of food and their required temperature to determine that they are safely cooked.- 165°F. Poultry. 155°F. Ground meat. 145°F. Whole seafood. 135°F. Ready-to-eat hot-held food.
  • RTE- a group of food products that are pre-cleaned, precooked, mostly packaged, and ready for consumption without prior preparation or cooking.
