Acidification is the process of adding acids to wine to adjust its acidity level. It's often used when grapes are harvested too ripe, which can lead to wines with low acidity and a high pH. A high pH can cause wine to be unstable, deteriorate quickly, and produce off-flavors. The most common acids used for acidification are tartaric and malic acid, which are naturally found in grapes.

Steps to tasting wine
• Look: Before you even taste the wine, take a moment to look at it. Hold the glass up to the light and observe its color and clarity. • Swirl: Next, swirl the wine in the glass. This will help to release its aromas and make it easier to smell. Be careful not to spill! • Smell: Now it's time to smell the wine. Put your nose right in the glass and take a deep breath. What do you smell? Fruits, flowers, spices, or something else? • Taste: Finally, it's time to taste the wine. Take a small sip and let it roll around in your mouth. What flavors do you taste? Is the wine sweet, sour, bitter, or savory? Is it light or full-bodied? • Savor: After you swallow the wine, take a moment to savor the aftertaste. Does the flavor linger, or does it disappear quickly?
The Story

You were on a tour of the winery when you decided to sneak away and look at all the barrels of wine and you got lost in the Barrel room. It was the end of the work day and all the staff locked up and went home. Now you have to find your way out of the winery by solving a series of questions and tasks in order to get the codes to unlock each room. Be on the look out for hidden interactive clues. Good Luck!
Chaptalization
Chaptalization is a winemaking technique that involves adding sugar to unfermented grape juice, or must, to increase the alcohol content of the resulting wine. The process is named after Jean-Antoine-Claude Chaptal, a French chemist and Napoleon's Minister of Agriculture who helped popularize it in the early 19th century.

As grapes ripen on the vine, they produce sugar as part of a process called veraison. As sugar levels rise, acidity falls, so winemakers have to make a decision on when to harvest the grapes so as to best achieve their desired wine profiles. Once harvested, the grapes undergo fermentation, where yeast transforms the sugars present in the juice into ethanol (alcohol). So in a nutshell, the higher the sugar levels in the grape, the higher the alcohol levels in the wine.

The Craft of Barrel Making
Barrels are more than storage; they're a winemaker's tool to finesse wine's flavor, color, and texture. Oak barrels, especially, are cherished for imparting complex flavors like vanilla, spice, and toast. They also allow gentle oxygenation, softening tannins for smoother textures and enriching the wine's color. This interaction transforms wine, adding layers of depth and character.
Wine fermentation is a complex chemical process that turns grape juice into wine through the interaction of yeast and sugars: The first fermentation, which is common to all wines, involves yeast converting grape sugars into ethanol and carbon dioxide. This process is oxygen and temperature-controlled. Careful cap management will be utilized via punch downs or pump overs to extract color, flavor and tannins.

Factors that affect fermentation The initial sugar content, fermentation temperature, and oxygen levels all impact the fermentation process. For example, the ideal temperature for color extraction in red wine musts is between 72–82°F (22–28°C). However, alcoholic fermentation produces heat, so careful temperature control is needed to prevent yeast growth from being restricted or stopped.

In the lab, winemakers anylize wine samples for various things and make adjustments where needed. It can also be a room where they try out various blending samples. In this room you will need to find the hidden clues to answer the final questions. If you get it right then you will be able to leave. Also the code numbers will be given as you find the clues. It can be a dangerous place if you don't watch where you're going. Now you have to navigate through the challenges to unlock the door to the next room.
