section
In the middle ages, society began to split into a high class and low class section, and the two groups ate very different food. The nobility dined on meat, which was expensive and belonged to the landowners. The poor began to use beans,
vegetables, and cereals as a staple in their diet. The meals were controlled by the seasons, and people were only able to eat what the land could provide.
Reading
spices
In the 16th century, the Empires in Spain and Portugal opened up trade routes as they explored the world. This meant that food from Europe began to mix with the spices and ingredients found in places like India and China. People began eating food with cinnamon, pepper and .
cloves. The taste of food became important and cooks started to experiment with spices and flavors they had never seen before. These exotic spices were expensive and in heavy demand.
Reading
crops
At this same time, the poorer farmers experimented with new techniques to grow grains and then sell these crops. They also began to cook with oils and sugar, which had recently arrived from the Caribbean. The workers began to mix food and create gruel, a soup with
green vegetables, beans, a bit of bacon, potato and cheese. Gruel was served with bread and provided enough nutrients for workers to keep their strength during the long, hard work day.
Reading
shortage
In the 19th century, as people began to immigrate, food started to become industrialized. People often had to migrate because of food shortages in their home country, and they arrived in new lands, where they found much more food available. People could buy ready-made food off of
carts, and the first version of fast-food began. Shops began to sell pre-made sandwiches, pretzels and pizza and workers were able to eat cheaply and quickly on their lunch breaks.
