In the middle ages, society began to split into a high class and low class section, and the two groups ate very different food. The nobility dined on meat, which was expensive and belonged to the landowners. The poor began to use beans,
vegetables, and cereals as a staple in their diet. The meals were controlled by the seasons, and people were only able to eat what the land could provide.

In the 16th century, the Empires in Spain and Portugal opened up trade routes as they explored the world. This meant that food from Europe began to mix with the spices and ingredients found in places like India and China. People began eating food with cinnamon, pepper and .
cloves. The taste of food became important and cooks started to experiment with spices and flavors they had never seen before. These exotic spices were expensive and in heavy demand.
