The food system
Air - water – environment pollution
The food system is everything we do to get food from the farmer to our plates. This means:
1. How farmers use their land to grow food, such as using fertilisers and protecting crops.
2. Keeping animals (such as cows and chickens) and catching fish.
3. Processing plants, animals and fish into food in factories.
4. Transporting and distributing food to shops.
5. The choices we make, such as what we buy in shops and how we deal with food left over.
6. How all this affects people and nature.

CO2 emissions
Over the last 60 years, the amount of CO2 in the air has increased extremely. This is mainly due to emissions released during the burning of fossil fuels like:
1 ton of CO2 is equivalent to litre bottles.
1 ton of CO2 is emitted when you fly from Amsterdam to Paris times.

Food miles emissions
1 ton of CO2 emissions is equivalent to driving a car for 5,800km. By emitting 1 ton of CO2 causes about 3 m3 of polar ice to melt.
CO2 emissions need to be reduced to keep warming below 2 degrees.
CO2 emissions (GtC) per year
335 GtC = 1228 trillion kg CO2
Western Europe, the United States and Australia together account for 48 per cent of food miles emissions.

Menu engineering
Create your menu focusing on:
less meat and fish;
season products;
sustainable/organic products;
You can make a positive contribution to preserving nature and the climate.
It saves you money.
country of origin and transport (food miles);
fair trade;
food waste;
packaging waste;
You stand out from competitors. You can thereby attract new customers and retain existing ones.
You ensure that farmers can earn more and create more local jobs.

Fairer prices for farmers
The price farmers get for their products is often low. It even happens that farmers have to sell their products for below cost price. Make the calculation:Farmers receive approximately 40 cents for a kilo of apples at the auction. The same apples are sold by supermarkets at approximately 2 euros per kilo. The supermarkets indicate that their margin is 2 to 3 percent.
What amount do the supermarkets get for 1 kilo of apples?
What amount stays left?
Where is that amount going to?
How can you ensure that the farmer earns more money per kilo of apples when you look at the food chain?
