Hāngī

Hangi is a traditional Maori dish from New Zealand. Several ingredients are placed underground, wrapped in damp cloths, and cooked slowly on very hot (volcanic) stones. It's an ancestral cooking method. This is ingrained in the history of the Maori people.

Hangi is a dish traditionally associated with the Maori people, a community of Polynesian origin that established it's home in New Zealand over 1,000 years ago (in the north of the country). Hangi, the ancestral heritage of the Maori, is much more than just a dish. It's a way for the community to come together, a ritual to celebrate their ancient traditions and a deep connection with the land, as its preparation implies a special respect for the natural environment.
