OUR TRADITIONAL FOODS

The most popular traditional foods in our school are the potato omelette and euskal pastela.

Euskal Pastela

The Euskal pastela has its origin in the Basque-French region of Lapurdi, and can currently be found in all types of cake shops, bakeries and restaurants in our country. It is so popular that every year a festival is organized in its honor and it even has its own museum. The origin of this recipe is not very clear, but everything seems to indicate that it was already elaborated in the small villages of Lapurdi during the Middle Ages.

Euskal Pastela

The upper part has an attractive bright color and can be decorated in different ways, the most common being the "laburu" or traditional Basque cross. Today, the Basque Pastel filled with cherries is still the most famous in the Basque-French area of Lapurdi, in the Basque Country and Navarre the cream ones predominate. However, we can find varieties with jams, raisins, powdered almonds, chocolate, vanilla, rum and a multitude of ingredients.

Potato omelette

The potato omelette, or as we call it, “patata tortilla” is an egg and potato-based dish that in recent years has become widely popular all around the world. It consists of fried sponge-like eggs, filled with diced fried potatoes, and, sometimes, chorizo, onions, or other types of vegetables.

The creation date for the recipe is not very clear, but some experts think that it was created around 1798, by a helper of the general Tomás Zumalacárregui, during the siege of Bilbao in the First Carlist War. Tomás needed an affordable but nutritious food for his soldiers, and the potato omelette was perfect to fill that role. Nowadays, the potato omelette has become an icon of the basque cuisine, becoming probably the most famous dish from our area.
