Peas with poached eggs

2 table spoons of olive oilHalf an onion, diced2 cloves of garlic1kg peas4 eggsBacon cubes (as many as you like)1 tomatoA glass of water

Ingredients

Heat the olive oil in a pan with the onion the garlic and the tomato.

Step

Add the peas and part of the water and let it cook for 20 minutes.

Add the bacon and let it cook for another 10 minutes. If necessary, add a bit more water.

Add the eggs and poach to taste (usually 5 minutes). Make sure the yolk does not solidify.

Remove from the heat and serve.
