ZERO WASTE BISTRO

STORY
I's a pop-up restaurant commissioned by the Finnish Cultural Institute of New York made entirely of recycled food packaging. It's designed by Linda Bergroth and Harri Koskinen and built on themes of circular economy, new material innovations, and sustainable design.

1. RECYCLED PLASTIC
It has been tested as safe for use with food products and meets the criteria for M1 ratings of low-emission construction products. Extremely resistant to wear, moisture and various types of chemicals and can be renewed with light sanding.
It’s a polyester-based solid surface material that contains about 30 percent recycled material and is 100 percent recyclable. The recycled post-industrial waste is granulated into small grains that give Durat its distinctive texture.

The panels are created from the shredding of the tetra pack
Tetra Pak containers are made up of 70% cellulose (paperboard), thin layers of polyethylene and aluminum.

The kitchen of chefs Luka Balac, Carlos Henriques and Albert Franch Sunyer also respects the ideals of the entire project and offers dishes cooked using only zero kilometer materials.
