Dairy cows like these Holsteins are carefully bred for traits that will give them better strength and produce more milk.
In 1950 there were 25 million dairy cows but today, there are only 9 million. However, today's dairy cows produce about 60% more milk. How is this possible? Back in 1944, each dairy cow produced about 548 gallons of milk per year but today, the average dairy cow produces 2,429 gallons of milk per year. This is due to artificial selection or selective breeding which has resulted in higher milk production from Holsteins.

Over time, selective breeding has modified teosinte's few small fruit cases into modern corn's numerous rows of kernels (far right). Selective breeding of crops such as corn and wheat is what allowed early humans the ability to develop civilizations.
