tirolean gulash

Ingredients for the goulash:

  • 7. teaspoon of pepper black or pink
  • 8. 2-3 pieces of garlic
  • 9. 1 bay leaf(foglio di aloro)
  • 10. 1 teaspoon caraway(cumino spezia)
  • 11. 1/2 teaspoon dried marjoram(maggiorana)
  • 12. 1 teaspoon of lemon
  • 13. spice butter
  • 1. 267 g (red or white) onios
  • 2. 333g beef cutted in piece
  • 3.83 ml of beef stock
  • 4. 1-2 spoon of white vinegar
  • 5. salt
  • 6.olive oil or seed oil

1. Peel and coarsely dice onions. 2. Dab goulash meat with a kitchen towel. 2. Sear meat vigorously in a roaster, working in portions and turning repeatedly. 4. Remove roasted meat and set aside. 5. Add diced onions to the roaster, fry with remaining fat until golden brown. 6. Reintroduce the meat, continue frying until a brown crust forms. 7.Deglaze with vinegar, let it boil down a bit.

8. Add salt, paprika powder, and beef stock. 9. Let goulash simmer for about 90 minutes at low to medium heat with the lid closed. 10. Occasionally check, stir, and add more stock if necessary. 11. Peel garlic, chop finely with bay leaves, caraway seeds, and marjoram leaves. 12.Mix with butter and lemon zest. When goulash is ready, stir in spiced butter. 13. Adjust seasoning with salt, paprika, or other desired spices.
