What are Ice Boxes?
- They're what people used to keep their food cold before the invention of the electric refrigorator we know today
- They take advatage of the power of Evaporation to keep food cold
Where did the Ice come from?
The ice industry provided winter work for local farmers
- From 1840 to 1920, the Ice Harvesting industry in New York was at its peak
- A single barge carrying ice could hould between 400 and 1000 tons of ice
The ice had to be thick enough to account for melting during processing

- Ice would be delivered to people similar to how we recieve the news paper
- The Ice which is stored up top in order to keep the content of the box cool would slowly melt, and the water would drain down into a basin at the bottom of the box
- People throwing this water out there window would be a common occurence
