To make eating healthily easier you should plan your meals beforehand and even batch cook them if you can (spend one day in the week cooking meals for the upcoming week, so they are ready to go when it is time to eat them). Healthy eating should be convenient, so you can buy pre-cooked legumes and beans, frozen vegetables etc. if it will help you maintain healthy eating habits.
