It is a gram-positve spore forming bacteria that can grow without oxygen.
It is found in the intestines of humans and animals as well as in soil, rotting vegetation, and marine sediment. Has to be ingested to enter organisms.
It is one of the most common causes for food poisoning. Additionally it causes gas gangrene from toxins the bacteria produces.
Produces many different types of toxins. Chlostridial hemolysins and extracellular enzymes play a role in its invasive process.
Clostridium perfringens
Between 40 and 140 °F the spores become active bacteria letting them multiply.
When cooked food is cooled slowly due to improper refrigeration, the bacteria on the food multiplies.
Can have a generation time as quick as 8 minutes between 109-117 °F. Usually closer to 10 minutes.
