Every day they taste 40-50 eaux-de-vie to ascertain what place in the world of Hennessy they belong, if any. Their mission is to pass on the know-how to re-create the Hennessy style for future generations. The flavors that come from careful selection, extended aging, and blending result in a cognac that is the hallmark of Hennessy.
