SOUL FOOD

Soul food is an ethnic cuisine traditionally prepared and eaten by African Americans, originating in the Southern United States.Soul food originated with the foods that were given to enslaved black people by their white owners on Southern plantations during the Antebellum period... The expression "soul food" originated in the mid-1960s, when "soul" was a common word used to describe African-American culture.

SOUTHERNDEVILLED EGGS

Ingredients

  • 1 dozen large eggs
  • 1 tablespoon yellow mustard
  • 1/4 to 1/3 cup mayonnaise (reduced fat is OK)
  • 3-4 tablespoons sweet pickle cubes, drained (optional)
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper

PIMENTO CHEESEON TOAST

  • 2 tablespoons extra-virgin olive oil
  • 2 leeks, white and light green parts only
