How To Peel Oaxaca Cheese
Oaxaca Cheese is a staple of regional Mexican cuisine. Knowing how to shred a wheel of this string cheese efficiently is a crucial skill on a taco truck, as you can easily go through 40 pounds of cheese in a day!
Rip off about 6 in. of the strand at a time, and start shredding the cheese by pinching it at the top and pulling. Put the shredded cheese into a bucket.
Take the ball of cheese and find the end of the strand. This is just like finding the end of scotch tape.
Start unravelling the cheese and wrap it around your hand like a spool of thread.
