Carbohydrates
Physical properties:Solubility: soluble in aqueous solvents . Viscosity: Amongst the most viscous natural products, increases it's chain leng and molecular weight. Crystallinity; tend to form cristaline shapes. Stability: fairly stable molecules. But sensitive to oxidation. Optical properties: do not absorb UV light very well as they do with the visible part of the spectrum.
