COLOMBIAN AJIACO
Ingredients: 1 liter of water 1000 grams of chicken ¼ chicken broth ¼ coriander 500 grams of corn (choclo) 350 grams of long onion (finely chopped) 4 heads of garlic (finely crushed) 2 tablespoons of salt 2 tablespoons of pepper 300 grams of red potato 300 grams of white potato ½ bundles of guasca 500 grams of Creole potato (Frozen) 100 grams of capers 100 grams of milk cream (Nescle)
INSTRUCTIONS To start, In a large pot, place the chicken, corn, chicken broth, cilantro, onions,
garlic, salt and pepper. Second, continue cooking the corn for about 15 more minutes. Save the
onions and then add red potatoes, white potatoes and the guascas. Cook
for 15 more minutes. Next, Add the water and bring to a boil, then reduce the heat to medium and cook for 30 to 35
minutes, until chicken is cooked and tender. Meanwhile, uncover and add the frozen Creole potato and reduce the heat for 15 minutes,
add salt and pepper to your liking. Then, remove the chicken and place it on another plate. At the end, Cut the chicken meat into small pieces and return to the pot. serve the Ajiaco with capers and heavy cream on the side.
