Step 3: The Recipe

AJIACO COLOMBIANO

Ingredients List:

• •To start with, in a large pot, place the chicken, corn, chicken broth, cilantro, onions, garlic, salt and pepper.
• • Second, add the water and boil, then reduce heat to medium and cook for 30 to 35 minutes, until chicken is cooked and tender.
• • After that, remove the chicken and place in another plate.
• • Afterwards, uncover and add the frozen criolla potato and reduce heat for 15 minutes, add salt and pepper to your taste.
• • Continue cooking the corn for about 15 more minutes. Put away the onions and then add red potatoes, white potatoes, and the guascas. Cook for 15 more minutes.
• • Meanwhile, cut the chicken meat into small pieces and return to the pot. At the end, serve the Ajiaco with capers and heavy cream on the side.
