The Payoya Sheep, or also called GRAZALEMEÑA or MONTEJAQUEÑA, is due to the name of Villaluenga del Rosario, and that of Montejaque.

The Payoya Sheep Cheeses are made by hand in the facilities of El Bosque (Cádiz). Currently it has several types of sheep cheeses:
