UTMB is about 60% the size of the Tampa General Hospital. Tampa General Hospital employs similar salad culinary concept to the one we want to launch at Café on the Court. Since UTMB is about 60% of the volume of the Tampa General Hospital, we scale down TGH data to match the numbers expected At Café on the Court.

The Sodexo Food & Nutrition team is always looking to upgrade food quality and bring more menu choices. After evaluating our current options at UTMB’s Café on the Court, we are confident that our customers would embrace and appreciate little change. The idea is to introduce several new culinary concepts to enrich the breakfast and lunch offerings. These concepts are: Breakfast

  • Breakfast Yogurt Bar

Implementation of these concepts, some more than others, require new station design, additional equipment, labor reshuffle, POS integration, etc. Therefore, we are not proposing to launch it at once but rather start slowly and then progressively increase. This approach will allow us to strategically study the progress and avoid possible bad responses resulting from the abrupt change. We are extending our breakfast offerings to made-to-order omelets, pancakes, and more sandwich choices.

Breakfast has its classics but that doesn’t make it rigid and boring! You’ll make your café a breakfast destination for your guests when you complement your Foundation Menu with Farmhouse. Adding one or more of the Farmhouse components provides guests with traditional favorites made from fresh, high-quality ingredients, healthy choices, and tremendous variety.

CONCEPT DESCRIPTION A breakfast yogurt bar is a convenient and healthy option. It provides a quick and healthy breakfast that will keep you going throughout the day. In addition, it can be a great way to control your cravings as you are more likely to feel satisfied with protein rather than carbs like pastries or cookies. You can quickly create a healthy breakfast. Just tell us what combination you want. The choices are:

  • Plain or Vanilla yogurt
  • Fresh strawberries, blueberries, cantaloupe and pineapple

  • Craisins

CONCEPT DESCRIPTION Breakfast pastry bars are a great way to start your day on the go. Our expert baker makes all of our baked goods fresh early in the morning. There is something for everyone's taste buds, from muffins, scones, and cinnamon rolls to chocolate chip, oatmeal and carnival cookies.

Popular flavors, from Vegetable and Hawaiian to Meat Lovers and Chicken Pesto, suit every craving. With five add-on side salads, Slices delivers exactly what guests want—fast, fresh-baked pizza slices and healthy side salads at an affordable price.

Slices serves up traditional fresh-baked pizza with the classic toppings, served hot, one slice at a time. It’s a must-have for every menu. Variety is also nice, so Slices includes additional pizza-inspired options like calzones and pizzaritos (strombolis).

We build our concepts and menus to offer guests what they want and how they want it. If a guest is looking for comforting, healthy or indulgent choices, they can find what they want within our café. Handcrafted is designed to meet the choice triggers of convenience and comfort.

CONCEPT DESCRIPTION Handcrafted offers a variety of premade specialty sandwiches to provide guests with fast speed of service, along with an optional build-your-own component for those who want a customized sandwich. To add interest and variety to the menu, there’s a selection of pickled vegetable toppings and side salads.
