  1. To begin with, if the chicken is roasted, we shred it. If it is raw, we cut the chicken into small cubes or strips. We salt and pepper and cook it over the fire to our liking, grilled with a little oil.
  2. Heat the tortilla in a pan. We brown it a little and turn it over.
  3. We put the grated cheese and the chicken on top. We add any other ingredient that you like. We like to put some finely chopped red pepper and red onion.
  4. Fold the tortilla in half to make a half moon and brown in the pan on both sides until golden brown and the cheese inside is completely melted.
  5. Once golden on both sides when we see that the cheese has melted, remove from heat and serve cut in half into two triangles.

  1. First, we prepare a syrup with the red fruits. To do this, we place the sugar, the water and the whole fruit in a saucepan. We bring to a low heat until the fruit falls apart.
  2. We pass the preparation through a strainer and reserve.
  3. Besides, we squeeze the lemons. In a large jug we place the resulting juice, the red fruit syrup, ice and water.
  4. Stir well and decorate with lemon slices and fresh raspberries, strawberries, cherries or blueberries.
  5. If you want to make a bubbly lemonade, use sparkling water or tonic.
  6. The syrup can be made without sugar. Then we will add sweetener to taste.

  • 2 ½ cups of flour
  • ½ teaspoon of salt
  • 4 tablespoons of sugar
  • 225 g of butter in pieces
  • 1 large egg
  • 2 tablespoons cold water

6-8 apples ¾ cup of sugar ¼ cup unsalted butter 2 tablespoons of flour a pinch of striped nutmeg 2 teaspoons cinnamon ½ teaspoon of salt 1 tablespoon of lemon juice

  1. The preparation of the dough is done by hand.
In a large bowl mix the flour, salt and sugar. With your fingers, add the pieces of butter and mix all these ingredients. Now add the lightly beaten egg. If you get tired, you can use a fork. If the dough is getting warm, leave it in the fridge for a few minutes. Are you seeing that it is also running dry? Well, add the cold water little by little while you are mixing. But be careful, do not pour it all at once, otherwise the dough may be sticky. Now divide the mixture in two, wrap it with plastic wrap and put it in the fridge for at least an hour. Meanwhile, make the filling. Peel and cut the apples (each half into 4 pieces). Put the pieces in a bowl and add the lemon juice, sugar, salt and cinnamon on top. Mix everything by hand or with a large spoon. In a skillet over medium heat, combine the butter with the flour, add the apples and stir until the sugar is absorbed (approximately 2 minutes will have elapsed). Cover the pan for 7 minutes to allow the apples to soften. Remove from heat. If it has been an hour since you put the dough in the fridge, take it out and take one of the two parts to put the base of the apple pie. Roll it out in a circular mold up to the edges of the mold. Put the apples on top and cover with the other part of the dough previously rolled out in a circular shape. Once the filling is covered, you can make some X-shaped cuts on the upper dough or if not, you can cut it into strips and place them on the apple horizontally and vertically. This way it is more aesthetic (as in the photo), although it is not necessary. Everything is almost ready, you just need to put the dessert in the preheated oven at 230ºC for approximately 40 minutes. If you want to make an apple pie a little lighter, all you have to do is use brown sugar instead of white and do not add the egg from the dough or the butter from the filling.
