- 1 unpeeled red apple, cored and chopped
- 1 carrot, grated
- 1/2 cup finely chopped red bell pepper
- 2 green onions, finely chopped
- 1/3 cup mayonnaise
- 1/3 cup brown sugar
- 1 tbsp lemon juice

1. Sauté onion in olive oil in a 4-quart pot over medium heat until translucent. 2. Sauté garlic. Add mushrooms, cook until slightly softened. Approx. 5 minutes. 3. Add celery, tomato, barley, broth, pepper and salt. 4. Once boiling, reduce heat to a simmer. Add herbs. Cover and cook until barley is tender. Approx. 10 minutes. 5. Add beans.
