Picture this, you are walking into a movie theater, what does it smell like? - Buttery popcorn The smell of popcorn is what we associate to laying back, relaxing, and watching a movie. Today we will dive into the chemistry behind this delicious smell.
Main components of this aroma
Three components that make up this smell are:2-acetyl-1-pyrroline, 2-furfurylthiol, (E,E)-2,4-decadienal.

It is an aroma and flavour compound present in jasmine rice and basmati rice. It is responsible for the 'popcorn' aroma in a large variety of cereal and food products.

Furan-2-ylmethanethiol is an organic compound containing a furan substituted with a sulfanylmethyl group.

(E, E)-2,4-Decadienal is an aromatic substance found in butter, cooked beef, fish, potato chips, roasted peanut, buckwheat and wheat bread crumb. In an isolated state, it smells of deep fat flavor.

- Sulfonyl group: A functional group found primarily in sulfones or to a substituent obtained from a sulfonic acid by the removal of the hydroxyl group similarly to acyl groups.
- Aldehyde: Aldehydes and ketones are organic compounds which incorporate a carbonyl functional group, C=O.
