STEP 1 Mix the flour, the yeast and 1 tsp salt in a bowl. Pour in 200ml warm water along with the oil. Stir together with a wooden spoon until you have a soft dough. STEP 2 Knead the dough for 5 mins until smooth. Cover with a tea towel and set aside for an hour. STEP 3 Make the tomato sauce. Put the oil in a small pan and fry the garlic, then add the passata and cook until the sauce thickens a little. STEP 4 Knead the dough quickly in the bowl. Roll out and put on a baking sheet. STEP 5 Heat oven to 240C. Put the sauce over the base, add some mozzarella, drizzle with olive oil and season. Put it in the oven and bake for 8-10 mins until crisp.
